Walnut mochi is a rice cake coated with sweet sauce made from grinded walnuts. It is a local cuisine that has been handed down in the Aizu region of Fukushima Prefecture.
Nowadays, it is said that more and more families do not have a pestle and mortar, but when I was a child, my grandmother always used a large mortar, and it was my job to hold the mortar in place.
Instead, you can easily make it with a food processor, so please try the deliciousness of this walnut mochi.
INGREDIENTS: 2 servings
- 4 mochi rice cakes
Walnut sauce
- 50g (1.8oz) walnuts
- 1+1/2 Tablespoon cane sugar
- 1/2 teaspoon soy sauce
- a pinch of salt
- 45ml hot water

Make walnut sauce
- Grind the walnuts until smooth using a pestle and mortar.
- Add sugar, salt and soy sauce and mix well, then add 45ml of hot water little by little and mix.

Toast mochi
- Heat the frying pan well, and toast the mochi for 3 to 5 minutes over medium-low heat. Flip over and toast for 3-5 minutes. Flip again and toast for 1 minute.

Coat mochi with walnut sauce
- Prepare boiling water in a small bowl.
- Put the toasted mochi in boiling water to soften, and then coat it with walnut sauce.
