Simple Zoni | Dashi Soup with Mochi

INGREDIENTS for Dashi Mochi: 2 servings

  • 4 mochi rice cakes
  • 2 umeboshi (pickled plums) 
  • Mitsuba (Japanese parsley) as needed
  • 1 dashi bag

INSTRUCTIONS for Dashi Mochi

STEP
Cut Mitsuba
  • Cut the mitsuba (Japanese parsley) into 3cm lengths.

Make Dashi
  • Put 400ml of water and 1 bag of dashi bag into a pot and bring to a boil.
  • Reduce heat to medium and simmer for 4 minutes. Turn off the heat and remove the dashi bag.
STEP
Toast Mochi
  • Heat the frying pan well, and toast the mochi for 3 to 5 minutes over medium-low heat. Flip over and toast for 3-5 minutes. Flip again and toast for 1 minute.
  • Place the mochi and umeboshi in a bowl and pour in the hot dashi soup.
  • Add the mitsuba leaves on top.
