I was able to get a rich flavor Oni-kurumi (Japanese walnut) from the Aizu region, and made a Yubeshi.
The Yubeshi means sweets made from yuzu (citron), but the Yubeshi in Fukushima is a rice cake made from walnuts. Enjoy the flavor of soy sauce and the savory taste of walnuts!
INGREDIENTS: 2 servings
- 100g (3.5oz) sweet rice flour (mochiko)
- 40g (1.4oz) walnut
- Potato starch (cornstarch) as needed

- 1 tablespoon soy sauce
- 150ml water

Roast the walnuts
- Roast the walnuts on low heat for 3 minutes.
- Roughly chop the walnuts (if it is large).

Make yubeshi dough
- Put 150ml of water, sugar and soy sauce in a pan, bring to a boil, and turn off the heat.
- Add sugar soy sauce to the sweet rice flour little by little and knead.
- Add walnuts and mix.

- Put the dough in a baking pan with a parchment paper.
- Place in a steamer and steam on high heat for about 30 minutes.

Cool & Cut
- Cool the Yubeshi in the refrigerator for half a day to make it easier to cut.
- Spread the potato starch (cornstarch) on the cooking tray and put the Yubeshi on it. Sprinkle potato starch.
- Cut it into pieces that are easy to eat, and sprinkle the potato starch on the cut end.
NOTES
・It is recommended to use a baking pan, which makes the Yubeshi dough 1 to 2cm thick (0.5inch thick).
