How to make Baked Sweet Potato (Yaki Imo)

When I was a child, I often heard the sound of cars selling baked sweet potatoes, “yaki imooo” during the cold season. Even now, I miss the taste of that baked sweet potato.
Homemade baked sweet potatoes are easy to make and delicious in the oven. You can make it moist and sweet by adding heat slowly.
I made it with two types of sweet potatoes, the rich and moist Silk Sweet and the soft and flaky Beni Azuma.

INGREDIENTS

  • 3 sweet potatoes

  Salt water

  • 2 tablespoons salt
  • 1 liter water

Preparation
  • Add 2 tablespoons of salt to 1 liter of water to make salt water.
  • Wash sweet potatoes well and soak it in salt water for 1 hour.
  • Wrap the sweet potatoes in paper towel soaked in salt water, and then wrap it in aluminum foil.

Bake
  • Bake it in an oven at 160℃ (320℉) for about 90 minutes (no preheating, on the upper shelf).
  • Turn off the oven when the sweet potato becomes soft.
  • Let the sweet potatoes rest for about an hour in the oven with the heat turned off.
NOTES
  • Soaking the sweet potato in salt water brings out the sweetness of the baked potato.
  • Wrapping the sweet potato in paper towels and aluminum foil allows the sweet potato to cook slowly, making it moist and sweet.
  • It is also delicious to eat chilled.
