INGREDIENTS for Udon : 1 serving
- 1 serving frozen udon noodles
- 1 fried tofu
- 1/3 green onion
- 1 dashi bag
- 2 tsp sugar
- 2 tsp soy sauce
About Dashi
The dashi I used this time has a slightly salty taste. When using unsalted dashi, add soy sauce and mirin (or mentsuyu) to your taste.
INSTRUCTIONS for Udon
STEP
Make the dashi
- Put 450ml of water and 1 bag of dashi pack into a pot and bring to a boil.
- Reduce heat to medium and simmer for 4 minutes. Turn off the heat and remove the dashi bag.
STEP
Make simmered fried tofu
- Wipe off excess oil from the fried tofu with paper towel, cut in half lengthwise, and then cut horizontally into 1cm wide pieces.
- Slice the green onions diagonally.
- Add 60ml of dashi, sugar, and soy sauce to a small pot, mix, and add fried tofu. Bring to a boil over medium heat, then reduce to low heat and simmer for about 5 minutes.
STEP
Boil the udon
- Boil or microwave the udon noodles according to the package instructions.
- Bring the remaining dashi to a boil over medium heat, then add the green onions and udon noodles and simmer over low heat for about 2 minutes.
- Serve in a bowl and top with fried tofu.
