I was surprised by the deliciousness of the Sukagawa Kappa Noodles (cucumber noodles) recommended by my sister.
This noodles are kneaded with cucumber juice, so when boiled, it has a refreshing aroma of cucumber.
The beautiful light green noodles go well with fresh vegetables and the spicy miso.
INGREDIENTS: 2 servings
- 1 bag of Kappa noodles (2 servings)
- 2 cherry tomatoes
- 1 cucumber
- 3-5 Lettuce leaves

Preparation
- Cool the attached sauce and spicy miso in the refrigerator.

Cut vegetables
- Cut the cherry tomatoes in half.
- Cut the cucumber into thin strips.
- Lightly roll the lettuce from the core and cut it into thin strips along the fibers.
- Mix lettuce and cucumber in a bowl.

Boil the noodles
- Put plenty of water in a pot and bring to a boil. Add the noodles and boil on medium heat for 4-5 min. and drain the water with a colander.
- Wash and cool well under running water, then remove the sticky starch by gently rubbing.
Drain the noodles well.

Serve
- Serve noodles on a plate and pour the sauce over it.
- Place lettuce, cucumber, and cherry tomatoes on noodles, and serve with spicy miso.
