Fukushima Local Specialty | How to make Enban Gyoza Dumplings

Speaking of local gourmet food in Fukushima City, the disk-shaped Enban gyoza dumplings are the most popular.
When my family gathers, we always go to eat Enban gyoza. It is a taste of Fukushima that makes you feel relieved.
There are about 20 to 30 dumplings on a plate, and the local way of eating is to eat one plate per person without rice. The dumplings are light and full of vegetables, so it’s healthy even if you eat a lot.

INGREDIENTS: 25 pieces

  • 25 gyoza dumpling skins   
  • 200g napa cabbage (or cabbage)     
  • 1/2 tsp salt
  • 25g Chinese chives (nira)  
  • 25g green onion (or onion)
  • 100g ground pork
  • flour as needed    
  • 1 tbsp vegetable oil           
  • 1 tsp sesame oil

Seasoning A            

  • a pinch of salt and pepper
  • 1 tsp Shaoxing wine
  • 1 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp grated ginger

Dipping sauce B   

  • 1 tbsp vinegar    
  • 1/2 tbsp soy sauce           
  • Chili oil (optional)          
  • Grated garlic (optional)

INSTRUCTIONS

STEP
Make gyoza filling
  • Roughly chop the napa cabbage, mix with 1/2 tsp of salt and leave for 10 minutes.
  • Roughly chop the Chinese chives and green onion.
  • Add seasoning A to ground pork and mix until sticky. Add Chinese chives and green onions. Squeeze the water out of napa cabbage, add and mix.
  • Let the gyoza filling rest in the refrigerator for 30 minutes.
STEP
Wrap dumplings
  • Sprinkle flour on the cooking tray so that the dumplings do not stick.
  • Place the filling on the gyoza skin and wet the edges of the dumpling skin with water. Press the middle and make 3 pleats on the right side, and 3 pleats on the left side.
  • Put it on the cooking tray sprinkled with flour.
STEP
Pan-fry
  • Heat a frying pan, add 1 tbsp of vegetable oil and turn off the heat.
  • Remove the excess flour, and arrange the dumplings in a circular shape on the frying pan.
  • Heat a frying pan over medium heat and pour 100ml of hot water over the gyoza. Cover with a lid, and steam for about 7 minutes.
  • When the water has evaporated, reduce the heat to low, and add 1 tsp of sesame oil from the edge of the frying pan. Cook for about 1 minute until the dumplings are browned.
  • Place a plate over the frying pan and flip it over.
STEP
Dipping sauce
  • Mix gyoza dipping sauce B and serve with gyoza dumplings.
