Beautiful amber color | How to make Japanese Bekko Ame (Caramel Candy)

The first time I made Bekko Ame was the science experiment in elementary school, and I still remember the excitement I felt at that time.
I remember telling my mother about that day, surprised at how the sugar melted into a beautiful amber color and how easily it hardened into a delicious candy.
Bekko Ame is an additive-free homemade candy made with only sugar and water. You will be relieved by the old-fashioned simple taste.

INGREDIENTS: 12 candies

  • 80g sugar (white sugar or granulated sugar)
  • 2 tbsp water

INSTRUCTIONS

Make Candy
  • Put sugar in a saucepan and add 2 tablespoons of water to moisten the sugar.
  • Cook over medium heat. When the sugar starts to change color, remove from heat.  
  • Shake the pan and use residual heat to add a beautiful amber color to the entire sugar (do not use a spatula).
STEP
Pour into Mold
  • While the candy is warm, pour it into a heat-resistant silicone mold or aluminum cup.
  • Remove from the mold when cooled.
NOTES
  • The candy will be very hot, so please be careful not to burn yourself.
