At my house, I often make chicken nanban soba using mentsuyu (noodle soup base) when I’m busy.
It’s quick to make and your family will love it.
The juicy flavor of the chicken and the sweetness of the melty grilled green onions are exquisite.
Perfect for New Year’s Eve soba.

INGREDIENTS for Chicken Nanban Soba: 2 servings
- 180g soba (dried noodles)
- 1 chicken thigh (250g)
- 1 green onion
- 15g Mitsuba (Japanese parsley)
- 100ml Mentsuyu (3x concentrated noodle soup base)
- 600ml water
- 2 tsp sesame oil
- Shichimi chili pepper (optional)
INSTRUCTIONS for Chicken Nanban Soba

Preparation
- Cut the green onion into 3cm lengths and make shallow cuts diagonally. Make cuts in the same way on the other side.
- Cut the Mitsuba (Japanese parsley) into 3cm lengths.
- Cut the chicken thighs into bite-sized pieces.

Fry Ingredients
- Heat sesame oil in a frying pan over medium heat, then add the chicken (skin side down) and green onions.
- Grill the green onions, turning them. Once the skin of the chicken is crispy, turn it over and reduce the heat to low. Once the chicken is cooked through and the green onions are soft, turn off the heat.
- Put mentsuyu (3x concentrated) and water in a pot and bring to a boil over medium heat. Add the chicken and green onions and simmer for about 3 minutes.

Boil Soba Noodles
- Boil plenty of water in a pot, add the soba noodles and boil according to the instructions on the package.
- Drain in a colander, Rinse under running water, and drain.
- Place the soba noodles in a bowl and pour the soba soup over. Top with Mitsuba and sprinkle with shichimi chili pepper to taste.
NOTES
・It is delicious when the green onions are grilled until they become soft.
