The Ume (Japanese plums) that have been pickled in Umeshu (Japanese plum wine) are delicious even if you eat them as they are, but you won’t be able to finish eating them.
In such a case, if you use plums as semi-dried fruits, most of the alcohol will be removed and it will turn into a delicious snack.
You can enjoy the moist and soft texture and the condensed taste of plums.

Preparation
- Cut the Japanese plums lengthwise around the seeds. Remove seeds.

Bake in an Oven
- Arrange the plums on a parchment-lined baking sheet.
- Heat it in an oven at 120℃ (250℉, No preheat) for 60 minutes, then turn over and heat for another 30 minutes to remove moisture.
- Remove the baking sheet from the oven and let it cool.
NOTES
- This recipe contains a small amount of alcohol.
- You can enjoy it as a snack with tea or alcohol. It’s also delicious to chop it up and put it in yogurt or pound cake.
STORAGE
- Store in the refrigerator in a sterilized glass jar, or freeze in a storage bag.
