INGREDIENTS for Dashi Mochi: 2 servings
- 4 mochi rice cakes
- 2 umeboshi (pickled plums)
- Mitsuba (Japanese parsley) as needed
- 1 dashi bag
INSTRUCTIONS for Dashi Mochi
STEP
Cut Mitsuba
- Cut the mitsuba (Japanese parsley) into 3cm lengths.

Make Dashi
- Put 400ml of water and 1 bag of dashi bag into a pot and bring to a boil.
- Reduce heat to medium and simmer for 4 minutes. Turn off the heat and remove the dashi bag.

Toast Mochi
- Heat the frying pan well, and toast the mochi for 3 to 5 minutes over medium-low heat. Flip over and toast for 3-5 minutes. Flip again and toast for 1 minute.
- Place the mochi and umeboshi in a bowl and pour in the hot dashi soup.
- Add the mitsuba leaves on top.
