Abutama (Eggs in fried tofu pouch)

My mother used to make “abutama”. The egg peeking out from the fried tofu looked beautiful and was one of my favorite side dishes.
There are only two ingredients: eggs and fried tofu. Simply put an egg in a bag of fried tofu and simmer in a slightly sweet dashi.
This is a delicious “abutama” that is soaked in plenty of dashi stock.

INGREDIENTS for Abutama: 2-4 servings

  • 2 fried tofu
  • 4 eggs
  • 1 dashi bag
  • 1 tbsp soy sauce
  • 2 tbsp mirin

INSTRUCTIONS for Abutama

STEP
Make fried tofu into a bag
  • Wipe off excess oil from the fried tofu with paper towel.
  • Place the fried tofu on a cutting board and roll the chopsticks over it about 3 times (rolling the chopsticks makes it easier to open into a bag).
  • Cut the fried tofu in half and open it into a bag.

Put egg in fried tofu
  • Place the fried tofu in a small bowl. Crack one egg into a separate bowl and pour into the fried tofu. Seal the fried tofu with a cocktail pick. 
  • Do the same with the rest.

Simmer in dashi
  • Put 400ml of water and 1 bag of dashi into a pot and bring to a boil again over medium heat. Simmer for 4 minutes, turn off the heat, and remove the dashi bag.
  • Add soy sauce and mirin and bring to a boil over medium heat. Add the fried tofu containing the egg, reduce heat to low and simmer for 5 minutes, then turn over and simmer for another 3 minutes.
  • Remove the cocktail pick, cut it in half, place it on a plate, and pour the broth over it.
