Buntan (Pomelo) Marmalade

Buntan, which has a refreshing scent and sweet and sour taste, arrived from Kochi.
It would be a waste to throw away the beautiful Buntan skins, so let’s make a delicious bittersweet marmalade using just the Buntan skins.

INGREDIENTS for Buntan Marmalade

  • 1 Buntan (Pomelo) peel (150g)
  • 120g granulated sugar
    (80% of the Buntan peel weight)
  • 1 tablespoon lemon juice

INSTRUCTIONS for Buntan Marmalade

STEP
Cut Buntan
  • Scrub the Buntan peel with salt and wash. Cut off the top and bottom of the Buntan, then cut the peel into 8 equal parts and peel.
  • Cut the Buntan peel (with the white part still on) into 3mm sticks and weigh them.
  • Prepare granulated sugar weighing about 80% of the weight of the Buntan peel.

Parboil Buntan
  • Put the Buntan peel and plenty of water in a pot  and bring to a boil. Boil on low heat for 5 minutes and drain in a colander.
  • Repeat this one more time. Soak it in water for 30 minutes to remove the bitterness, then drain it.
STEP
Simmer Buntan
  • Add the peel, granulated sugar (80% of the peel weight), and lemon juice to a pot, mix, and let stand for about 20 minutes.
  • When the granulated sugar melts and water comes out, bring it to a boil over the medium heat. Reduce the heat to low and simmer for 30minutes until the water evaporates, stirring occasionally.
  • Put the marmalade  in a sterilized storage jar while still hot. Cover the jar and invert it upside down to cool.
NOTES
  • The white part of the peel has a bitter taste. If you don’t like bitter taste, please scrape it off a little.
  • Please use an acid-resistant pot such as stainless steel or enamel.
  • How to sterilize the jar by boiling
    1. Wash the storage jar thoroughly with dishwashing detergent and dry it.
    2. Place a dishcloth on the bottom of the pot and place the bottle on top.
    3. Add enough water to cover the jar and bring to a boil. Then reduce heat and simmer for 5 minutes.
    4. Turn the jar upside down and let it dry.
PRESERVATION

・Can be stored in the refrigerator for 2 weeks.
