This is a recipe for homemade apple ginger jam filled with apples and ginger.
Pour hot water into apple ginger jam to make a hot drink that will warm your body.

This time I used Fuji apples from Fukushima.

INGREDIENTS for Apple Ginger Jam
- 2 apples (550g)
- 190g granulated sugar (35% of the weight of the apple)
- 4 tbsp grated ginger
- 3 tbsp lemon juice
INSTRUCTIONS for Apple Ginger Jam

Cut Apples
- Rub the apple skin with salt and wash.
- Cut into 8 equal pieces with the skin on, remove the core, and thinly slice crosswise.

Simmer Apples
- Add the apples, lemon juice, and granulated sugar to the pot, mix, and let stand for about 20 minutes.
- When the granulated sugar melts and water comes out, add grated ginger and heat over medium heat.
- Once it boils, reduce the heat to low and simmer for about 30 minutes, stirring occasionally.
- Put the jam in a sterilized storage jar while still hot. Cover the bottle and invert it to cool.
NOTES
- Please use an acid-resistant pot such as stainless steel or enamel.
- It’s also delicious if you add cinnamon sticks or black pepper (whole).
- How to sterilize the jar by boiling
1. Wash the storage jar thoroughly with dishwashing detergent and dry it.
2. Place a dishcloth on the bottom of the pot and place the bottle on top.
3. Add enough water to cover the jar and bring to a boil. Then reduce heat and simmer for 5 minutes.
4. Turn the jar upside down and let it dry.
